It's about time I started using my Jamie's Dinners cook book! Last weekend, I made rigatoni with sweet tomatoes, eggplant, and mozzarella. Delicious. It fed me for days and motivated me to be try out more of his recipes. The book itself is beautiful... it starts with a minty-green and pink colored cover and progresses to full page pictures, thick matte pages, and naturally narrated recipes. I think it will become my go-to summer cookbook. On Tuesday while I was flipping through its pages and planning my meals, I decided that this summer chickpea salad would pair perfectly with a forecast of sunny skies & warm breezes.
